Few foods are as simple yet delicious as garlic bread. Just three ingredients – bread, garlic, and butter – create a side dish that's flavourful and always has you coming back for a second slice.
And while this easy formula is always a win, if you're looking to elevate things, you need to try Maryam Zekria's caramelised onion rendition. The addition of caramelised onion, parmesan, and parsley creates a rich umami flavour that makes this snack even more irresistible than before.
Whether you're looking to upgrade your next dinner party or whip up a quick mid-week nibble, this crispy perfection will not disappoint.
Ingredients
- 4-5 whole garlic bulbs
- 1 stick unsalted butter
- 2 small yellow onions
- 1/2 bunch parsley
- Loaf of favourite bread
- Grated parmesan cheese to preference
- Salt to taste
- Chilli flakes to taste
- Oil (olive oil or avocado)
Method
- Set oven to 250 degrees Celcius.
- Leave butter out on counter to come to room temperature and soften.
- Cut off the tops of all the whole garlic, drizzle with oil, and sprinkle with salt.
- Wrap garlic in aluminium foil and place into the oven for 45 min-1 hour until golden.
- Slice onions.
- On low heat, caramelise the onion in a pan with a small amount of oil.
- Chop caramelised onions finely.
- Finely chop fresh parsley and set aside.
- When garlic is roasted and cooled to handle, squeeze it out into a bowl.
- Combine with softened butter and mix well making sure to mash all the garlic.
- Add in chopped caramelised onions and fresh parsley. Mix well.
- Season with salt and chilli flakes (optional for a little kick) and mix again.
- Cut your bread loaf in half and spread the caramelised onion butter mixture onto both sides of the bread.
- Sprinkle with as much or as little parmesan cheese as you’d like.
- Lower oven temp to 230 degrees Celcius and cook bread for 8-10 minutes or until golden and crispy.
- Cut up and enjoy!
